Veganšpek is a new bistro that both vegans and meat lovers can look forward to.
Even though vegans and vegetarians normally eat at specialised restaurants, isn’t it sometimes awkward when there’s a mixed crowd of vegans and meat lovers?
Well, Karolina Blažeković decided to put an end to it and open Veganšpek (“Veganham”), a place where all the picky eaters from your social group can eat their hearts out.
As Telegram reports, the restaurant is located in Tomašićeva 6, near Trg žrtava fašizma and its owner, Ms Blažeković, was one of the contestants in the culinary show “Tri, dva, jedan – kuhaj!”
She said she wanted to create a cosy space, like a living room, with warm colours, wooden furniture and with a comfortable atmosphere. The 60-m2 space seats around 30 people who will be eating fresh food from the nearby Kvatrić market, while eco ingredients and organic groceries will be coming from Bio&Bio and Austria.
Nine members of the team want to offer their guests meals consisting of a balanced ratio of nutrients such as carbs, fat and proteins.
“Everyone has a right to live their life as they see fit, and that applies to eating, too. I will offer guests the option of combining meat, for example with daikon which neutralises cholesterol in the meat. I won’t bother anyone with details, but I will be there if guests want an explanation regarding meals, or a piece of advice. Who knows, if enough people are interested, I might organise a healthy diet education programme here,” Ms Blažeković says.
“Every ingredient has a certain way of influencing your organism. Our octopus stew, for example, is special because the combination of black soy and yellow beetroot in the stew is good for your kidneys,” she explains.
Their daily offer will consist of soup, vegetarian and meat dish and stew. It will cost HRK 45, and the a la carte menu will consist of two vegan, two fish and two meat dishes. Depending on the daily offer, guests will be able to choose ingredients they want on their own.
The dessert section will mostly comprise non-gluten cakes, or cakes in which healthy food replacements are used, but there will also be classic desserts, made using regular eggs and butter.
In addition to food, you can look forward to a solid alcohol collection – there will be craft beer and signature cocktails made using fresh fruit and spices, and super premium alcohols, such as Monkey Shoulder whiskey, and Hendrix, Botanist, Roby Marton gins and Gin Mare.
“We want to offer our guests a place where they can eat good food, drink a glass of good gin and whiskey, drink a cup of coffee and read a book, or stop by with their friends for a cocktail at night. That’s why we’re a bistro and not a restaurant. We want to create a comfortable place for everyone at any time of day,” Veganšpek barman Filip Sedlar says.
