The 13th annual Prosciutto fair takes place this weekend in Sinj!
The Sinj Business Center, in cooperation with the City of Sinj and Split-Dalmatia County, organizes the National Prosciutto Fair with international participation – and is a manifestation that brings together all of the relevant factors in the production and marketing of prosciutto and other assortments of cured meat products.
Entertained in Alkar City with a long, unchanged tradition of producing these delicacies, the fair has gained the prestigious reputation among both experts and visitors. For more than a decade, it has attracted more and more tourists to Inland Dalmatia, and best yet, during the preseason.
Manufacturers will have the opportunity to present their products at appropriate stands where visitors can see, taste and buy the products on offer. The fair also acts as an excellent opportunity for producers to present and market their products with the participation of the media that will follow the event.
There will also be a vibrant cultural and artistic program, promotion of traditional customs and crafts, and the performance of cultural and artistic associations from the area of Dalmatia and Lika.
A series of workshops regarding current topics in the fields of agriculture and economy have been planned with the participation of eminent experts. It is important to mention that this year, the traditional tourist and hospitality schools in the areas of Sinj, Dubrovnik, Split, Trogir and Šibenik will also be present. Students will compete in the BURA CUP and compete in the art of arranging and serving prosciutto and other traditional products.
The evaluation of the quality and specificity of individual prosciutto producers is planned for March 22, 2018, the day before the fair itself. A committee made up of renowned experts and scientists, members of the Association of Sensory Analysts, representatives of scientific institutions, and the Ministry and Quality Center of the Croatian Chamber of Commerce will evaluate the prosciutto, based on the Rulebook on the Quality Assessment of Prosciutto. The evaluation is public with the presence of members of the expert committee, representatives of the producers, and the media.
This year’s fair expects to see participants that manufacture prosciutto and permanent cured meat products from Croatia, family farms, prosciutto producers, Slavonian ham producers, the regional meat industry, representatives of producer associations, individual producers, leading producers of Istrian ham and Italian ham, Italian guests , guests from Slovenia and Bosnia and Herzegovina, representatives of pig breeders’ associations, regional family farms dealing with pig breeding, representatives of leading chain stores, hoteliers and caterers.
