If you’re out of ideas what to make for lunch today and want to impress your friends with your cooking prowess, why not make Zagreb Schnitzel?

Sundays are traditionally associated with family lunches in Zagreb and this is one of the most typical Sunday meals.This dish, very similar to Wiener Schnitzel or Cordon Bleu, is made using a thin slice of meat (veal, pork, or poultry), rolled with cheese and ham, put into flour, egg and bread crumb mixture and then fried.

Here’s a step by step recipe you can follow.

Ingredients:

  • 8 veal or pork cutlets
  • 8 slices ham
  • 100 g cheese (i.e. Gouda)
  • 3 eggs
  • 1 cup all-purpose flour, 1 cup dry bread crumbs
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 8 teaspoons mustard
  • Vegetable oil

Method:

  1. Place each cutlet between two pieces of plastic wrap and pound with a meat mallet. Season to taste and smear one teaspoon of mustard over each cutlet.
  2. Place a slice of ham and then a square portion of cheese on each cutlet. Roll each cutlet with ham and cheese inside, press it firmly with your palms and tuck in ends, or fasten with toothpicks.
  3. Beat the eggs using a whisk or a fork and add salt, put flour and breadcrumbs into separate bowls. Roll each cutlet into flour, then dip in eggs, and finally roll it in breadcrumbs.
  4. Heat oil in a skillet over high heat, and reduce the heat when you place breaded cutlets in the skillet. Each should take 5-6 min per side to cook.
  5. Place the cutlets on paper towels to soak up the extra oil.

You can add croquettes, mashed potatoes or rice and peas to the cutlets and pour some lemon juice over them if you like.
