One of the pioneers of fusing the flavors of Dalmatia and Asia comes from one of the most revered families in Croatia – the Šare family.

You may have heard a thing or about their dynasty which begins in the oyster-rich village of Mali Ston, home of the first Bota Šare restaurant which opened some 30 years ago. Keeping the authenticity and heartiness of Dalmatian cooking in their primary location, today, the Šare’s proud tale of Dalmatian cuisine has developed into locations north and south – and while Dalmatia is the heart of the process, the young blood in the family has introduced a hot kick – the flavors of Japan.

The Bota Oyster & Sushi bars located in Split, Dubrovnik and Zagreb are considered tried and true Asian fusion cuisine.

“The specialties created by the combination of top quality food from the Adriatic with Japanese culinary methods create a unique fusion of scents, flavors and textures that represent the innovative direction in which Bota’s gastronomic offer is developed. The best quality food, such as oysters from Mali Ston, bluefin tuna, shrimp, Mediterranean spices and salt from Ston are the basis of every meal you will taste in this gastronomic corner,” Bota explains of their Split location.

Guests can choose from fresh Ston oysters to tempura, sashimi, maki and nigiri. A variety of standard rolls like the Philadelphia Roll or Tiger, Spicy Tuna and Salmon Skin Roll will transport you back to your favorite sushi house in the States, while signature rolls such as the Futomaki Spring Roll mix the flavors of tempura shrimp, salmon, wasabi sesame, basil, spring onion and soya pepper to bring another dimension to your dinner.

For guests looking to fight the fish, teriyaki steak and chicken can be found on the menu, along with a signature stellar ‘Spring Roll a la Bota’ dressed with cucumber, bell pepper, chicken, cream cheese, mayonnaise, coconut pastry and fried in panko crumbs.

“A need to preserve genuinity, to offer originality, to reach perfection, but remain humanly intimate. This is our goal, our motto…”
