Chefs with as many as 20 Michelin stars will attend.
The Istrian County Tourist Board, in cooperation with the Croatian National Tourist Board and the Maistra hotel company, will organise the 4th Istria Gourmet Festival which will take place over two days, reports Jutarnji List on October 19, 2018.
The congress, whose main goal is to present the latest global trends and develop the prospects for future development of the food and wine hospitality sector, will be held on 29 and 30 October at the Hotel Lone in Rovinj. The participants will be top culinary stars, Michelin-starred chefs, who will hold interesting educational presentations.
The first day of the conference, with as many as 20 Michelin stars, is intended for the hospitality industry (kitchen and food & beverage departments). For the first time, Croatia will welcome one of the founders of the molecular cuisine movement, chef Juan Amador, as well as two outstanding representatives of Amazonian cuisine. The participants are: Francesco Mazzei (Sartoria), Aurora and Massimo Mazzucchelli (Marconi Mollica), Andrea Ribaldone (Arborina), Roberto Cerea (Da Vittorio), Giancarlo Morelli (Il Pomiroeu), Pedro Miguel Schiaffino (Malabar), Matteo Mettulio (La Siriola), Juan Amador (Restaurant Amador), Pino Cuttaia (La Madia), Andrea Migliaccio (L’Olivo), Emanuele Scarello (Agli Amici dal 1887).
The conference will this year also bring two completely new programmes, one dedicated to gourmet pizzas, and another to crafts, which will take place in parallel with the main congress.
The masterclass dedicated to gourmet pizzas, a phenomenon which has emerged in Italy in the last several years and has an increasing number of followers, will offer a new approach to the dish popular around the world. The guests will be top experts: Simone Padoan (Pizzeria I Tigli), Edoardo Ore (O’ Sfizio d’à Notizia), Diego Vitagliano (10 Diego Vitagliano Pizzeria), Pasqualino Rossi (Pizzeria Élite Rossi), Vincenzo Pagano (Scattidigusto).
When it comes to craft beers, the top representatives of the sector will introduce us to the history of beers, the craft revolution and the secrets of pairing food and beers. This segment will feature Lorenzo Dabove Kuaska, Stefan Grauvogl, Teo Musso, Simonmattia Riva and Zvonimir Pelko.
The second day of the conference is devoted to presentations on wine tourism and examples of how the best in the world do it. The conference will also focus on the hotel industry, particularly the best practices and trends in luxury hotels. The lectures will be held by some of the world’s best experts on hotel operations and eminent professionals from the wine industry.
Among the guests are the former director of Michelin Italia guide and the president of the French Association of Wine Tourism. The distinguished lecturers on the second day have a total of nine Michelin stars. They are: Charlotte Feugere (French Association of Wine Tourism), Yolanda Perdomo (Gastronomy Tourism Expert), Isabel Aguirrezabala Wurster (Deputy Director, San Sebastián Turismo), Iván Llanza Ortiz (Director of Corporate Communication and Institutional Relation, Osborne Group), Gennaro Iorio (Chef Caviste Caves Etablissements S.B.M.)
During the Istria Gourmet Festival, three gala dinners will be held under the auspices of chefs from Michelin-starred restaurants. All guests will have the opportunity to meet some of the world’s best chefs and enjoy their delicacies. The Wine Vault restaurant of Hotel Monte Mulini will welcome chef Roberto Cerea with three Michelin stars. Chef Matteo Mettulio, the owner of two Michelin stars, will present his specialties at the ResoLution Signature restaurant at Hotel Lone, which will also host the third gala dinner, organized by two chefs: Giancarlo Morelli and Pedro Miguel Schiaffino, who will present the varieties of Amazonian cuisine.
