Istrian wine producers are currently embracing one of the fastest-growing trends in the global drinks industry: alcohol-free wine. Poslovni writes that producers based across Istria have become among the first in all of Croatia to develop this new category, but they have warned that creating a quality non-alcoholic wine is far more demanding, and expensive, than many consumers might imagine.

For a region internationally recognised for premium wines, especially its indigenous varieties and high-quality production, the move represents a major technological step rather than simply a new product line. Istrian winemakers are trying to preserve the character, aromas, and structure of wine while removing alcohol — a process that presents significant challenges.

Alcohol plays a crucial role in wine. It carries aromas, contributes to texture, balances acidity, and gives wine much of its body. Removing it without damaging the final product requires advanced technology and careful production methods.

The process usually involves specialised de-alcoholisation techniques, including methods that remove alcohol at low temperatures to better protect the wine’s delicate aromas. These systems are expensive, and many smaller producers cannot afford to invest in the necessary equipment themselves.

This means that producing a good alcohol-free wine is not simply a matter of taking a finished bottle and removing the alcohol. Winemakers must carefully select the base wine and adjust the entire process from vineyard to cellar.

The rise of alcohol-free wine is connected to changing consumer habits. More people are looking for drinks with lower alcohol content, whether for health reasons, lifestyle choices, or simply because they want more options.

The trend has already expanded internationally, with major wine markets increasingly dedicating space to alcohol-free alternatives. Even traditional wine regions are beginning to explore the category as consumer expectations change. For Istria, a region that has spent decades building its reputation through quality and innovation, the move fits into a broader strategy of staying competitive on global markets. Istrian wine producers have previously focused on strengthening their international reputation through premium production, branding, and new approaches.

Some wine lovers remain sceptical, arguing that wine without alcohol loses the very thing that defines it. However, producers believe the category should not be viewed as a replacement for traditional wine, but as an additional choice for consumers. The biggest challenge is quality. A successful alcohol-free wine must avoid becoming simply a sweet grape-based drink and instead retain the complexity expected from wine. That requires better technology, better grapes, and more experimentation.

Istrian winemakers have built their reputation by combining tradition with innovation. From protecting native varieties to modernising production, the region has repeatedly positioned itself as one of Croatia’s most dynamic wine areas. Alcohol-free wines are the latest example of that approach.

The market is still young, and production remains costly, but Croatian producers see an opportunity: reaching new consumers while proving that wine culture can evolve without abandoning quality. For Istria, the future of wine may not only be measured by what is in the bottle, but also by what is no longer inside it.
