January the 17th, 2025 – The Croatian brand Boogie Bakery is enjoying global expansion as it takes on the markets of Dubai and New York.
As Josipa Ban/Poslovni Dnevnik writes, the Croatian brand Boogie Bakery is the brand behind the very popular bakery and bistro Boogie Lab. It’s become known for its production of sourdough bread and pastries, and it has now announced the establishment of a new company, Boogie Technology. This brand new company should bring new improvements in the production of local bakery products that are rapidly conquering global markets, expanding sales and production. Recently, they became part of the offer on the flights of the American airline company Delta Airlines and started exporting to the demanding market of Dubai.
It’s already fairly well known that the Croatian brand Boogie Bakery has developed technologies that are crucial in the production of bread and pastries, obtained by fermenting dough with the help of natural lactobacilli and yeast. This technology ultimately enabled them to produce on a large industrial scale, and they still don’t seem to have much competition.
Karlo Vulin, co-founder of Boogie Bakery (which was until recently Kroštula), claimed that the task of the new company will be the development of more advanced solutions for production management and the application of artificial intelligence in the food industry.

“The company will be primarily focused on automating and scaling sourdough production. With a note that we’re always focused on spontaneous fermentation, the only real artisanal technique of sourdough production”, he pointed out.
“We’re planning to open up a special company with the aim of implementing a growth strategy and financing model that are different from our bakery companies,” he added.
According to Vulin, the development and production of this brand new technology will take place in the centre of Zagreb. They’re also planning to open an office across the pond in New York, where the office for the implementation of solutions and development in the target markets will be located.
“We’re planning to work on solutions that will standardise the production of starter cultures and bread in an artisanal sense. This includes everything from the development of new starter cultures, to the control of mixing, fermentation, and all the way to the control of the actual baking process,” noted Vulin.
In developing new solutions, the Croatian brand Boogie Bakery (which will now be taken over by Boogie Technology) is already collaborating with a team of top experts from various industries. This includes scientists from the Faculty of Food and Biotechnology and Zagreb’s famed Ruđer Bošković Institute.

The Croatian brand Boogie Bakery’s breakthrough into the USA began about a year and a half ago after they were contacted by the owners of Delmonicos, a prominent American restaurateur with Croatian roots. Shortly after the first contact was made, Boogie Bakery began exporting four containers of sourdough bread per month to the US market for more than 150 clients. Most of them are based in New York, but there were others outside of the Big Apple.
The success of Boogie Bakery’s American distributors is also very clearly evidenced by the comment that they have never seen such rapid progress of a new brand.

This Croatian company’s origins can be drawn to Pakoštane and family bread production, seeing it put Croatia in the spotlight on the global stage yet again. Company progress is excellent as there will be the construction of a new plant in the USA, in which 20 million dollars will allegedly be invested. Another new plant should also be opened in Pakoštane sometime this year.
Accelerated expansion

These new facilities are necessary because this Croatian sourdough producer is expanding rapidly. Recently, their products have become part of the offer on flights of the American Delta Airlines, one of the world’s largest airlines. The Croatian brand Boogie Bakery has stated that their products will be available on all flights from the USA to Europe and back in both first and second class.
In addition to all of the above, back in December 2024, they delivered their very first container of products to Dubai, marking the beginning of exports to the Gulf countries. It goes without saying how important these markets are for a relatively small and young company. Boogie Bakery is a fantastic example of how innovation in an otherwise very traditional industry, supported by technology, can bring global success to small Croatian manufacturers across the board.
