The wonderful agricultural cooperative “Maslina i vino” (olive and wine), Masvin for short, is located in Polača, halfway between Benkovac and Biograd na Moru on the northern Dalmatian coastline. If you are nearby, don’t pass upon visiting, as they recently, as part of the wine cellar, opened a wonderful tasting room for guests. Not only will you enjoy the beauty of vineyards and olive groves, but be hosted by wonderful people. As they say, they grow the three graces from Dalmatia. Along with vines, there are also olives which give extra virgin olive oil and scrumptious figs, with all their products labelled in possession of an ecological certificate.

Cabernet Sauvignon is a world renowned variety from France, grown today in almost all world countries. It is the descendant of the spontaneous cross-breeding of Cabernet Franc and Sauvignon.

This sample of Masvin’s Cabernet Sauvignon has a wonderful, deep dark red colour, which immediately shows it is a mighty wine.

It has a very pronounced and intense fruit scent. The first association is sour cherry, then come blackberry and hints of other forest fruit. After some time in the glass the scent of wood and herbal notes comes to the front, with an accent on pepper. This wine is certainly recommended to be left to breathe and allow to open up slowly in order to enjoy all the scents that are gradually freed.

The taste is savoury and rich in fruit with a pronounced freshness. Just like the scent, time spent in the glass changes the wine and it becomes softer and more pleasurable. Ripe tannins round off the fruit palette of tastes and give it a good fullness. The wine has pronounced acids, but blended well, with a small sugar residue. It has strong taste, but at the same time drinkability. In the mouth it is long-lasting with an especially pleasant and lovely ending. The wine is in its prime and will stay so for a while.

This mighty Cabernet Sauvignon is best served at 16 – 18 °C, with red meat and venison dishes. It will also go well with beefsteak and rump steak. It can also go with grilled dishes, like lamb and grill with Mediterranean spices.
