One of Zagreb’s best pizza places, Chateau des Jardins in Tkalčićeva street, was the location of the second premium story organized by the G.E.T. Table Culture Society. Besides the unquestionable quality of pizzas, this locale supports a wine story, giving a great basis for this tale. This time we combined premium Kutjevo d.d. wines, our permanent project partner, with premium ice creams by Gelati D’Oro – NATURA.
At the very beginning, guests were served Maximo Brut, an excellent champagne by Kutjevo d.d. “Maximo Brut is a champagne created the traditional way, 100% Graševina sort, where the expeditionary liqueur was substituted with the ice harvest of Graševina. This gives it a special note of sweetness and combines quite well with light sweets, which these ice creams definitely are”, sommelier Aleksandar Noršić explained.
No one truly knows how ice cream was created, but the story reaches way back into China, 3.000 years B.C., while some say it arrived to Europe during the times of Marco Polo. It’s interesting that there are records from the Persian war of Alexander The Great refreshing his troops with ice cream, while Egyptians enjoyed it in a different way. In the times of pharaohs ice cream was made mostly from camel milk with cream and yoghurt, frozen after adding glazed candy and nuts, served as a special delicacy.
Nutritionist master Diana Gluhak opened the story about ice cream: “Although ancient nations knew how to enjoy sweets, we’re not often treated with special, functional ice creams which in addition to the nutritional value have excellent taste. This is what the Gelati d’Oro ice creams are.” She also explained the difference between “regular” ice creams and gelato. “Gelato is often thought of as the Italian word for ice cream, but it’s actually a super-ice cream. Gelato is much thicker, to needs not be frozen at vey low temperatures, is creamy in structure and much better in nutrition. Equally, Gelati D’Oro – NATURA are gluten-free products, and the strawberry flavored is also suitable for vegans”, she explained and added a fact that will thrill all ice cream lovers: “Did you know that gelato is highly recommended between meals? Besides being a source of calcium, quality milk proteins or rice (depending on the production), these ice creams contain chicory, a very valuable source of alimentary fibers beneficial for digestion. If you want to eat a dessert that has a good nutritional story, Gelati d’Oro are gelato ice creams your taste buds will love.”
The presented ice creams by Gelati D’Oro – NATURA line are a Croatian product, made by the Frigus Vecla company from the town of Krk on the island bearing the same name. “Gelati d’Oro was named after the old Roman name for Krk island, Isola d’Oro – island of gold. The NATURA line ice cream is a high quality treat made from superior ingredients of exclusively natural sources”, said company owner Dalibor Jurina and added: “The richness of taste was achieve by using superior ingredients, such as Vrgorac strawberries, Vanilla Burbon Madagascar BIO, Cocoa Dominicana BIO Fairtrade, Hazelnut Piemonte IGP… It contains no artificial colors, stabilizers, aromas or emulsifiers. It has a lower sugar and fat content than regular ice creams and contains no gluten, as evidenced by the certificate.”
Therefore, this is a sweet you can enjoy for its superior taste, while being completely natural!
Besides the Maximo Brut champagne, other superior wines by Kutjevo d.d., precisely Maximo Nero (Cabernet Sauvignon, Merlot and Syrah), de Gotho Black Pinot and Turković Graševina were combined with ice creams, but not in a glass. One of our finest chefs, Belizar Miloš of Agava restaurant, prepared sauces by reducing said wines that combined with these ice creams gave excellent results. All of this was joined by Maximo Brut in a glass. This way we demonstrated that wines can be combined with food through cooking, not only drinking. With wine based sauces, one should especially mention the orange and Torkul olive oil emulsion.

In the end, as a tasting crown, Katja and Kristijan Šragalj, owners of the Chateau des Jardins pizzeria, prepared several pizzas and showed us why they’re one of the best. Highly recommended pizzas! Technological characteristics:
Mixture stabilizer – carob flour, plant fibers, rice flour.
Emulsifier – egg yolk.
Total sugars 16% for vanilla, 18% for chocolate (average for dairy ice creams is 16-25%).
Total fats for vanilla 6%, 8″ for chocolate and hazelnut due to naturally present lipids (average with industrial ice creams is 8-16%).
The creaminess of ice creams was achieved through a high percentage of skimmed milk and cream, without any artificial emulsifiers.
Does not contain gluten.
Fruit ice creams contain no lactose or fats.
Ice cream contains no added artificial aromas or colors.

On the wines of Kutjevo d.d
Maximo Brut – a Kutjevo Graševina sort champagne has a fresh and rich taste, pure minerals and fine pearls. The smell is opulent, of ripe apple, with a light flower component. To be served at 6 °C, from smaller tall glasses, with seafood and fruit sweet and gelato.
Maximo Nero – expertly built wine from world renown sorts Cabernet Sauvignon, Merlot and Syrah. Fine tannin matured wine, medium strong body and great accord of taste and smell. Lightly barriqued in Slavonian oak.
de Gotho Black Pinot – strong but harmonious wine, taking you back in time, through oak forests, across meadows covered in fragrant violets and gardens filled with branches of ripe blackberries, raspberries and plums. A subtle fragrance of black pepper and cloves, vanilla nd caramel.
Turković Graševina – is a repeated award winning, superior semi sec wine. As an old, valuable family photo, this bright and opulent, green-yellow and crystal clear wine adorns the family cellar of the Turković family. Strong bonds of love, knowledge and tradition give the wine layers of playful flower notes and ripe fruit aroma, a secretive bitterness of hazelnuts and almonds, embroidered with fresh citrus notes. To be served chilled to 10°C, with white fish, lamb, veal, pork, fried chicken or pizza.
These wines cannot be bought in shopping malls but exclusively in restaurants and specialized shops as well as in the new “Svijet vina” chain of wine stores opened by Kutjevo d.d. in several locations in Zagreb, at markets. Two have been opened so far: at the Jarun and Gajnice markets.
